COLD FRUITED CHICKEN/TURKEY SALAD


Cold Fruited Chicken/Turkey

Easy and scrumptious!

  • 1/4 cup of dried apricot halves, quartered
  • 1/4 cup of chopped purple onion
  • 1/3 cup of orange juice
  • 2 cups of chopped cooked chicken or turkey
  • 1 (11-oz) can of mandarin oranges, drained and halved
  • 1/2 cup of seedless red or green grapes
  • 1 (2.25-oz) package of sliced almonds, toasted
  • 1/4 cup of chopped fresh parsley (I left out)
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt
 DIRECTIONS:
1.  Bring apricots, onion and orange juice to a boil in saucepan  and then           cool.
 
2.  Combine the apricot mixture, chicken, and rest of ingredients and chill           for 1 to 2 hours. 


(Makes 4 servings)
