CARROTS WITH GARLIC AND CUMEN



Carrots with Garlic and Cumin

Another winning recipe that always gets compliments.

  • 9 large carrots, scraped, and cut into 1/2 inch slices
  • 3 large cloves of garlic, minced
  • 1/4 cup of olive oil
  • 1 tablespoon of ground cumin
  • 1/2 teaspoon of cayenne pepper
  • 1/4 teaspoon of salt
  • 1 1/2 tablespoons of lemon juice or the juice of half a lemon
  • Fresh cilantro or parsley, chopped 

DIRECTIONS:

1.  Boil the carrots in water until they are tender (about 15 minutes).  Drain.

2.  Heat the oil in a large saucepan. 

3.  Add the garlic, cumin, cayenne pepper, lemon juice and salt.  Cook and       stir for 1 minute (do not let the garlic brown).

4.  Add the carrots and toss well to heat through.  Adjust the seasonings.

5.   Serve warm, at room temperature or cold.

6.   Sprinkle with the chopped cilantro or parsley.

(makes 6 to 8 servings)
